Almond Joy Chocolate Chip Cookies
One of my favorite candy bars is Almond Joy. I knew I had to try to make them in cookie form. The result… an incredibly easy cookie recipe for AMAZING, addictive Almond Joy Cookies.
They are everything you love about the candy bar in delectable, chewy cookie awesomeness.
I decided to make my Almond Joy Cookies similar to chocolate chip cookies. I’m glad I did.
After my first batch, my aunt and I were worried the cookies did not have enough coconut flavor. Right out of the oven, the cookies tasted more like chocolate chips cookies. I was disappointed.
My aunt thinks this is because I used store brand coconut flakes. The flakes on their own didn’t have a strong coconut taste, so she’s probably right.
A day later though, the Almond Joy cookies tasted more like Almond Joys! The end of each bite was exactly like the candy bar.
Because of this, I offer two options…
With Coconut Extract or without Coconut Extract
Option 1… Add a little coconut extract to the cookie batter. This creates a more pronounced coconut flavor. If you love the taste of coconut, I highly recommend adding coconut extract.
Option 2… Do not add coconut extract to the cookies. I do recommend using a better quality of coconut flakes. I also recommend not eating the cookies right out of the oven.
For some reason, allowing them to sit for a little bit (I put mine in an airtight bag) leads to an extremely delicious, delightful cookie with, in my opinion, the perfect amount of coconut flavor.
The coconut is more subtle than option 1. I did notice that different people had varying opinions on how pronounced the coconut taste was, which is incredibly interesting.
I did ponder adding coconut oil to the recipe. Maybe replacing the butter with it. If anyone tries this, please let me know. I’ll also update this post if I do!

Tips for Making Almond Joy Cookies
- I recommend using high quality, sweetened coconut flakes for more coconut flavor (if you are not using coconut extract). Baker’s Angel Flake Sweetened Coconut is a great option!
- Always preheat your oven and place the cookie sheet in the center of the middle rack.
- Cream the butter and sugar together. This creates light and fluffy cookies.
- Sliced Almonds create the perfect crunch and well-rounded almond taste. I used FISHER Chef’s Naturals Sliced Almonds.
- I always line my baking sheets with parchment paper. It makes it easier to remove cookies after baking. It’s also a healthier alternative to aluminum foil.
- Let the cookies cool on a cooling rack. This Stainless Steel Baking Rack & Cooling Rack is heavy-duty and safe to use in the dishwasher and oven. You can cool baked goods on it without worrying it’ll tip over and you can cook meats on it for crispy perfection (It’s really great for making crispy bacon!).
*Yields about a dozen cookies
- 1/2 cup Butter, softened
- 1/2 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1/2 tsp. Baking Soda
- 1 1/2 cups Flour
- 1/2 cup Chocolate Chips
- 1/2 Shredded Sweetened Coconut Flakes
- 1 Egg
- 1/2 cup Sliced Almonds
Optional – 1/2 tsp. Coconut Extract
How to Make Almond Joy Cookies
- Preheat the oven to 350 degrees F.
- In a medium mixing bowl, cream the sugar and butter together.
- Mix in the egg. If you are using coconut extract, add it in as well.
- Add the flour and baking soda. Some people recommend combining the flour and baking soda first, on their own, in a separate bowl. I just add them both to the bowl of mixed wet ingredients. It leads to less dishes!
- Fold in the coconut flakes, sliced almonds, and chocolate chips.
- Drop balls of cookie dough about 2 inches apart on a prepared cookie sheet. I roll balls of dough with my hands. A cookie scoop definitely makes this process easier and less messy. I haven’t found a cookie scoop that I would recommend yet. If you know an affordable one that doesn’t easily break, PLEASE let me know!
- Bake for about 10-13 minutes or until lightly golden.
- Let cool completely, preferably on a cooling rack.
Almond Joy Cookies can be stored in an airtight container for up to a week at room temperature.
